Their groves consist of 6500 olive trees, some of which are more than 2000 years old and are grown in their 80-acre grove under constant care following the unbending rules of traditional farming.
The handpicking and sorting of the olive fruit, the washing, the removal of the skin and pits from the olives, the same day before the milling, are unique procedures that are followed by the company to produce high-quality EVOO. The reason behind the removal of the skin stands on the common truth that even though they do not spray their olive trees with pesticides, what is carried by the wind from the nearby farms or groves cannot be controlled. Thus, this method is the most efficient in terms of cleansing the fruit. Then the olive juice is cold extracted without its pits solely by mechanical means in 3-phase centrifugation at approximately 19°C (66.2°F), securing the olive oil's quality, texture, and aromas. After the extraction process, Olea Juice is stored in temperature-controlled nitrogen stainless steel tanks in order to remain as fresh as it can get until the bottling.
